A quick and easy alternative to regular taco’s.
What you’ll need:
- 1lb. ground beef
- 1 pack taco seasoning mix
- 1 pack of hard taco shells (12)
- 1 cup of corn (frozen or canned)
- 1 2.25 oz. can of sliced black olives
- 1/2 cup shredded lettuce
- 3/4 cup of cheese (your choice)
- 2/3 cup water
- 1/4 cup sour cream
- Taco sauce
Pre-heat oven to 400F
Brown the ground beef over medium heat.

After browning, drain off fat. I like to tip the pan on the burner and use a couple paper towels to absorb the fat. It can then be thrown in the trash.

Add corn, olives, seasoning mix and water. Mix together.

Simmer over medium-low to low heat until sauce thickens.

Once thickened, transfer to porcelain pie dish or casserole pan. Add 1/2 the cheese on top of the beef, then add 3 broken up taco shells. Add remaining cheese on top.

Bake for 10 minutes, until cheese melts and starts to brown. Now, heat taco shells according to the package directions.

Add taco sauce, shredded lettuce and sour cream.

Use remaining taco shells, split in half, to scoop and eat.
