Air Fried Chicken Dinner

Air fried chicken, potatoes and broccoli (yes, air fried broccoli)

Once again, I’m trying to make decent meals with what I have on hand. I don’t want to head out if I don’t have because of Covid-19. Massachusetts (USA) is now under a stay-at-home advisory.

I’ll explain how I made this, but it’s all fairly basic, so I wont be listing a recipe.

Wash the potatoes, pat dry, then slice into chunks.

Put the chunks in a bowl, coat with a little oil (I use avocado oil) and add whatever spices you like.

Put the coated potatoes in your air fryer and cook for about 20 mins @ 400f. Shake the basket every few minutes.

Scramble 1 egg in a bowl. Put flower and seasoned breadcrumbs in two additional bowls. Coat chicken breast with flour. Shake off any excess. Next, dredge the breast in egg and then coat with breadcrumbs. I used an individually packed, single serving chicken breast.

I missed taking a picture of the breaded chicken breast before cooking it. Oops 😛

When the potatoes look like they’re pretty much done, lower the heat to 370f and add the chicken. Spray the top of the chicken with cooking spray. Cook for 10 mins (adjust based on breast size).

While the chicken is cooking, coat broccoli with a little oil. Add some garlic powder, kosher salt and black pepper to taste. I like to also add some Montreal steak seasoning.

When the chicken is done, take it and the potatoes out of the air fryer and cover to keep warm. Cover the bottom of the air fryer basin with water, add broccoli to basket and cook on 400f for about 6 mins.

That’s it. Plate and enjoy!! 😋
